3:10 What’s new at the winery in the Colagrossi portfolio including a Sparkling Rosé di Sangiovese. (Wow!) Sparkling is so versatile and pairs with everything. In the pipeline is Aglianico, a red wine grape variety native to southern Italy and Montepulciano, a red grape grown widely in central Italy, both coming this summer. Also new is La Catola, a blend of Cabernet Sauvignon and Sangiovese.

7:22 Fast Five Recipe – Baked Salmon with Honey Mustard Glaze from Jesse Malvesti of David Coffaro Winery.

Ingredients:
Salmon
Stone Ground Dijon mustard
Honey
Fresh Tarragon leaves
Olive oil

Directions:

Pre-heat oven to 375. Place salmon on a baking sheet. In a small bowl mix all other ingredients together. Spoon half the mixture over the salmon in an even layer. Place in oven for 15 minutes. Remove from oven and spoon the remaining mixture over the salmon and put back in the oven for another 5-10 minutes till done and fish flakes easily. That’s it! Pair with David Coffaro Dry Creek Pinot Noir.

13:52 Artisan Alley a beverage collective in Windsor has a two wineries, a cider maker, a distiller, and a brew pub. Third Friday a monthly event, from 5-8 pm, starting up again in April.

18:01 Craig got started with winemaking working with Carole Shelton—an icon in the wine industry.

20:20 Hours at the winery are by appointment on weekends – but call or drop by if you are in the area.

21:15 Wineries are still taking reservations but most are allowing walk-ins if they have room, so stop by.  

22:33 Tastings with Craig usually include some barrel tasting too since the tasting room is in the barrel room.
